Professionalism and Quality.
One more generation, and these words will disappear from Dictionaries of most countries.
Meet the legendary, world famous God of Sushi - Jiro Yoshino.
Jiro is 85 years old, 75 of which he devoted to mastering the art of sushi making. His 10-seat, sushi-only restaurant, inauspiciously located in a Tokyo subway station, is sought after by many people worldwide. To their greatest disappointment, the place is booked up months in advance, in spite of being the most expensive sushi place in the world.
It takes 2 years to learn how to properly give a 45 minute massage to octopus, so that its meat is properly tenderized. It takes 7 years to learn the art of slicing the fish. It takes 10 years to learn how to pick the right rice and another 10 how to chose the right fish. Only then, one learns how to make sushi.
